A fragrant chilled compote of seven dried fruits and nuts, traditionally prepared for Afghan New Year.

A DISH WITH A STORY
Haft Mewa—“seven fruits”—is an Afghan Nowruz tradition prepared in advance and shared on the first day of spring. Families vary the exact seven ingredients, but the clear, naturally sweet syrup and softened fruits are essential.

- ½ cupdark raisins
- ¾ cupdried apricots
- ½ cupsenjeddried oleaster, or dried figs
- 8 cupsboiled and cooled water
- 2 tbsprose wateroptional

METHOD

Soak the walnuts, almonds, and pistachios separately in hot water for 1 hour. Slip off the skins.
- 02
Rinse all dried fruit carefully. Cut large apricots or figs into bite-size pieces.
- 03
Combine the peeled nuts and dried fruits in a large glass bowl or jar.
- 04
Add the cooled water and rose water. Stir, cover, and refrigerate for 24–48 hours.
- 05
Stir once or twice as the fruit softens and naturally sweetens the liquid.
